Pico De Gallo

 

In Mexico, the term “pico de gallo” (literally translating to “rooster’s beak” in Spanish) refers to a mixture of diced tomatoes, onions, and jalapeño peppers. Additional ingredients such as shrimp, avocado, lime juice or cider vinegar, chopped fresh cilantro, cucumber, radishes, or firm fruits like mango can also be incorporated.

Do you enjoy pico de gallo as much as I do? It’s a classic Mexican tomato salsa that adds fresh, healthy, and low-calorie flavor to almost any Mexican dish.

When I was younger, I used to heap pico de gallo onto tortilla chips at our local Mexican restaurant and consider it a meal (with a refill, of course). However, it wasn’t until my family traveled to Mexico one summer during my college years that I fully appreciated the wonders of pico de gallo.

We stayed at an all-you-can-eat resort, which meant unlimited access to pico de gallo. The pico de gallo was incredibly fresh and utterly irresistible; I found myself adding it to every meal—eggs, tortillas, beans, spaghetti—why not?

Ingredients:

  • 3 tomatoes
  • 1 green pepper
  • 1 red onion
  • 1 lime
  • 1 chili
  • Salt
